dong po pork (dongpo rou)
one of the most famous of hangzhou's perfected by shang palace, hangzhou shangri-la hotel.
method
1. wash pork thoroughly and cut into four-centimeter cubes.
2. slice the spring onion and ginger put into a large bowl. stir in the sugar and wine. add the pork to the bowl and mix well. leave to marinate in the refrigerator for four hours.
3. braise in a wok until well done.
4. transfer ingredients to a clay pot and steam until tender.
